Soyabeans are a wonderful source of plant-based protein. Unlike most plant protein, soy has all nine essential amino acids. Non-vegetarians mostly get them from animal protein.

Raw soybeans contain a trypsin inhibitor, trypsin- key enzymes to digest proteins. Heat inactivates the trypsin inhibitor, so boiling or any form of cooking destroy trypsin inhinitor.
Boiling at atmospheric pressure during 20 minutes is required to destroy 80% of the soybeans antitrypsin activity.
